Unlike regular rice, which can leave you feeling heavy and bloated, cauliflower rice is low in carbs, high in fiber, and great for absorbing sauces and spices. Greek Chicken Skewers with Cauliflower Rice (Serves 4)
For the skewers:
- 1/4 cup olive oil
- 1 medium lemon (juice and zest)
- 4 teaspoons minced garlic
- 1 teaspoon paprika
- 1 teaspoon dried rosemary
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 24 ounces boneless, skinless chicken thighs (cut into 1-inch cubes)
- 2 medium zucchinis (sliced into 3/4-inch thick pieces)
- 1/4 cup feta cheese (for garnish)

For the cauliflower rice:
- 400 grams cauliflower (riced)
- 4 tablespoons butter
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions:
- Prep all ingredients. Cut chicken into 1 – 1 1/2 inch cubes and zucchinis into ~ 3/4 inch thick slices.
- Make the marinade. Combine olive oil, lemon juice and zest, minced garlic, paprika, rosemary, Italian seasoning, salt, and pepper.
- Marinate the chicken. Pour the marinade over the chicken and cover with plastic wrap. Marinate for at least 2 hours, or overnight for best flavor.
- Prep the grill. Preheat the grill to medium-high heat. Alternate chicken and zucchini cubes on skewers.
- Grill the skewers. Grill for 3 minutes per side, rotating 1/4 turn while cooking. The chicken is done when charred and fully cooked.
- Make the cauliflower rice. Melt butter in a pan over medium-high heat, then add riced cauliflower. Season with Italian seasoning, salt, and pepper, and stir often until moisture releases.
- Serve. Once the cauliflower is tender-crisp, serve with the skewers. Sprinkle with feta cheese and enjoy!
